The answer depends on what counts as drinking
Ask when humans started drinking alcohol and three timelines appear. The longest begins before humans: ripe fruit contains water and sugar, and environmental yeast can reach that sugar when the skin splits. Fermentation then produces ethanol without a brewer, recipe, or ceramic jar. An animal eating fallen fruit can therefore encounter alcohol by accident.
A second timeline begins when people made fermentation happen deliberately. That requires more than finding a suspiciously soft fig. Someone must gather an ingredient, prepare it, keep it in a suitable container, and wait long enough for microorganisms to work. The third timeline begins later still, with residues durable enough for archaeologists to identify. These events did not necessarily happen at the same time.
The practical answer is therefore a range, not a birthday. Alcohol existed in nature millions of years ago. Evidence consistent with purposeful cereal brewing is about 13,000 years old. Strong surviving evidence for a prepared fermented drink is about 9,000 years old.
Fermentation began as an ecological fact
Yeast consumes sugars and produces ethanol and carbon dioxide. Damaged fruit is already a small, wet, sugary vessel, so warm fallen fruit can ferment on its own. The result would have been variable and short-lived, not a stable modern drink.
This makes a useful distinction between exposure and manufacture. An ancestor could consume ethanol without understanding fermentation. Repeatedly producing a drink meant noticing a pattern: sweet material changes when it sits, and particular handling makes that change more likely.
The video also describes an evolutionary clue involving ADH4, an enzyme that helps process alcohol. Reconstructed ancient versions suggest that an ancestor shared by humans, chimpanzees, and gorillas became substantially better at metabolizing ethanol roughly 10 million years ago. That result does not show an ancient drinking culture. It is consistent with ethanol becoming a regular enough part of food—perhaps in fallen, overripe fruit—to matter biologically.
Raqefet Cave preserves a possible recipe
The earliest surviving clue to deliberate cereal brewing comes from stone mortars at Raqefet Cave in present-day Israel. Natufian people used the cave as a burial place about 13,000 years ago. Researchers reported plant residues and changes to starch grains consistent with several linked steps: germinating grain, crushing it, heating it with water, and allowing it to ferment.
That sequence matters more than the modern label “beer.” A thick cereal mixture from wild grains would not resemble a clear lager. What makes it significant is the apparent process. Malting, mashing, heating, and fermentation are deliberate transformations, not simply fruit decaying where it fell.
The mortars’ burial context also suggests that the drink may have belonged to ritual feasts. Food and drink can gather people, display generosity, and mark a shared event. Fermentation was therefore not merely a technique for producing a chemical. It could already have had a social job.
The interpretation is not a prehistoric bottle with a readable label. Ancient starch can be altered in more than one way, and the brewing interpretation has been debated. The careful wording is that Raqefet provides very early evidence consistent with deliberate brewing.
Pottery makes later evidence clearer
At Jiahu in present-day China, pottery dated to roughly 7000–6600 BC preserved residues from a fermented mixture of rice, honey, and fruit. It does not fit neatly into the modern boxes of beer, mead, or wine. That is precisely the point: ancient makers worked with available sugars, not contemporary product categories.
Pottery improved both control and preservation. A jar can hold a mixture while yeast works, be reused, and leave residues on a surface that survives after the liquid disappears. The archaeological record becomes easier to read once durable containers enter it.
Later evidence includes grape wine in large jars in the South Caucasus and fermented grain drinks embedded in the economies of Mesopotamia and Egypt. As communities became more settled, alcohol could appear at meals, feasts, funerals, offerings, negotiations, or as compensation. Its history is inseparable from containers, stored surplus, and gatherings.
Beer did not single-handedly invent farming
Early brewing has encouraged the appealing theory that people adopted cereal farming because they wanted beer. Fermented grain may well have been one incentive. It could add flavor, calories, and a reason to hold a feast. But grain was also storable, cookable, tradable, and capable of feeding larger communities.
The evidence does not support reducing agriculture to a single thirst. Brewing and cultivation could reinforce each other without one simple cause. Settled communities made controlled fermentation easier; fermentation made stored crops useful in another way.
The equally popular claim that ancient people drank alcohol because all water was unsafe also goes too far. Water quality varied, and people used springs, wells, streams, and other workable sources. Early fermented drinks were not a universal substitute for water, and they were generally much weaker and less controlled than modern spirits.
The first batch probably disappeared
Archaeology dates what survived. Before pottery, a person could ferment fruit or grain in a gourd, animal skin, wooden bowl, or lined basket. Those containers and their contents usually decay. Countless experiments may therefore predate the oldest residue we can examine.
That changes the final question. Humans did not invent ethanol; yeast had done that already. The human innovation was turning a chance encounter into a method. A container held the ingredients. Memory held the sequence. Waiting completed the process.
The oldest known drink is consequently less important than the transition it reveals: accident became observation, observation became repetition, and repetition became a recipe with social meaning.
